Henderson’s Relish, and the four Sheffield kitchens cooking with it

Sheffield’s brown sauce has been blended in the city since 1885, and chefs now put it on pizza and tacos as well as burgers and a beef terrine.

The pizza Sheffield’s newest Neapolitan place chose to make its local one is the Yorchetta: porchetta, sage and onion stuffing, burnt apple, pork crackling and a shake of Henderson’s Relish. Forbici, which came over from Manchester in March, knew what it was doing. In Sheffield the thin, dark, spiced sauce is “Hendo’s”, and a growing number of chefs cook with it.

Henry Henderson blended the first batch at his home on Green Lane in 1885, and by 1890 he was selling it from his grocer’s shop at 35 Broad Lane. The company says the recipe is known to three family members. It is made with tamarind, cloves and cayenne, and unlike Worcestershire sauce it contains no anchovies. Sales passed a million bottles a year in 1951, and in November 2013 the blending moved from Leavygreave Road, where it had been for 50 years, to Sheffield Parkway Business Park. The firm still sponsors a Made in Sheffield prize at the Exposed Awards; this year it went to Bullion, the Kelham Island bean-to-bar chocolate maker.

These are the places that cook with it.

Forbici

The Yorchetta costs £14.50, against £10.95 for a margherita, and the relish is the last thing on the list of toppings, with the parsley. Pizzas come with scissors. There are no bookings on Millennium Square. Millennium Square, city centre · Yorchetta £14.50 · walk-in

Pellizco

Pellizco started as a street-food trailer in 2020 and opened on Dyson Place in 2022. Its Henderson’s quesadillas (£8) pair queso Oaxaca with a chutney of Henderson’s and guajillo chilli, plus guacachile, and they’re the cheapest way to try the sauce cooked. Add the tacos al pastor at £9.50 a pair. Dyson Place, Sharrow · Henderson’s quesadillas £8 · book

Silversmiths

Hendo’s turns up as a reduction, with balsamic, on the first starter of the autumn à la carte: local beef rib, confited in dripping and pressed into a terrine (£10). It’s the most careful use of the sauce on this list. The à la carte runs on Friday and Saturday evenings; the Tuesday-to-Thursday supper club is £25 for two courses. Arundel Street · beef rib terrine £10 · à la carte Fri–Sat · book

Jimmy’s Burgers (Cambridge Street Collective)

At its city-centre counter in the Cambridge Street Collective food hall, Jimmy’s makes its own Henderson’s ketchup for the Strong & Northern, a smashed burger of 35-day dry-aged beef with mustard, onion, bacon and cheese sauce. The name comes off the old Henderson’s label. Cambridge Street Collective, city centre · walk-in
